Job Description
Mercure Miri City Centre, a 172-room full-service hotel in Miri, Sarawak, Malaysia, is seeking a Halal Executive to establish and maintain halal compliance and food safety standards across all food and beverage operations.
Key Responsibilities
Halal Compliance & Certification
- Manage all halal certification applications, renewals, and submissions through the MYeHALAL platform
- Establish and maintain the Halal Assurance System (HAS) in accordance with Accor standards and Malaysian requirements (JAKIM, JAIS, and relevant authorities)
- Liaise directly with Malaysian halal regulatory bodies to ensure ongoing compliance
- Maintain current halal certificates, supplier records, and ingredient lists in audit-ready condition
- Track and verify certificate expiry dates and update supplier and ingredient information as changes occur
Food Hygiene & Safety
- Conduct regular inspections across kitchens, receiving areas, storage rooms, and F&B outlets
- Monitor food handling, temperature control, sanitation practices, and personal hygiene standards
- Support HACCP implementation and maintain food safety documentation
- Identify non-conformities and coordinate corrective actions with relevant departments
Audit & Compliance Preparation
- Prepare the hotel for halal audits, HACCP audits, and regulatory inspections
- Track audit findings and ensure corrective actions are completed on time
- Prepare regular compliance reports for management with proactive risk identification and recommendations
Supply Chain Verification
- Verify halal certification of all suppliers and raw materials
- Maintain an approved halal supplier and ingredient list
- Work with Purchasing and Receiving to ensure only approved items enter food operations
Training & Culture
- Deliver halal, hygiene, and food safety training to all relevant staff
- Promote a culture of halal and food safety awareness across departments
- Maintain comprehensive training records
Qualifications
- Diploma or degree in Halal Management, Islamic Studies, Food Science, Food Technology, Food Safety, or Hospitality Management
- Recognized Halal Executive or Halal Professional certification preferred
- HACCP or food safety certification an added advantage
- Hands-on experience with MYeHALAL platform, halal documentation, supplier verification, and audit preparation highly preferred
- Fluent in English and Bahasa Malaysia
- Strong documentation, reporting, and organizational skills
- Proficiency in Microsoft Office
