Chef, Cambodia Cuisine (Halal Kitchen)

Novotel Phnom Penh BKK 1 (an Accor hotel property in Phnom Penh, Cambodia) seeks a full-time Chef to lead its dedicated Halal kitchen. This role is explicitly for Muslim applicants with hands-on expertise in Halal food preparation and management.

**Role Overview**

You will oversee all kitchen operations for the Halal cuisine section, ensuring every dish, ingredient, and sourcing decision meets strict Halal certification and compliance standards. This is a leadership position combining culinary creativity with operational excellence.

**Key Responsibilities**

• Develop innovative menus reflecting current culinary trends while maintaining complete Halal compliance
• Ensure rigorous Halal certification standards, HACCP principles, and food safety/hygiene protocols are upheld; prevent cross-contamination between Halal and non-Halal items
• Manage daily kitchen operations: food preparation, plating consistency, inventory control, purchasing, and cost management
• Lead, recruit, train, mentor, and motivate kitchen staff to maintain high culinary standards and guest satisfaction
• Oversee quality control and food cost management to ensure profitability and efficiency

**Requirements**

• Must be Muslim with strong personal knowledge and practical experience in Halal food preparation
• Culinary Arts or Hospitality Management diploma/qualification (preferred)
• 5–8 years of progressive culinary experience
• At least 3 years in a senior leadership position (Executive Chef, Head Chef) in a luxury hotel, resort, or fine dining establishment
• Strong working knowledge of HACCP, food safety, and sanitation standards
• Proven expertise in menu development, food cost control, purchasing, and team leadership
